The beans feature desirable varietals, primarily Catuai and Mundo Novo, which are celebrated for their uniform sweetness and balance. The distinct flavor of this roast is largely shaped by the Pulped Natural processing method: the coffee cherry pulp is removed, but a thin layer of sticky mucilage is left on the bean as it is dried in the sun.
